Mushrooms in Creamy White Sauce



 I used to be terrified of making a white pasta sauce; don’t know why because it’s really quick and easy.  And definitely a lot less work, so if anyone wants to whip up a yummy dinner in under  30 minutes, you can try this.





Mushrooms in Creamy White Sauce
2 tbsp Olive Oil
4 cloves of Garlic (minced/ grated) We love it garlicky at home, but you can use two cloves when making the first time.
1 cup Mushrooms (chopped)
¼ tsp Rosemary (dried)
¼ tsp Basil (dried)
Salt to taste
Whole Cracked Black Pepper to taste



For the White Sauce
1 ¼ Cups Milk (About 300ml)
5 tbsp Butter (About 75gms)
3 tbsp All Purpose Flour
3 tbsp Sour Cream
3 tbsp Cheddar Cheese (grated)
Salt to taste
Whole Cracked Black Pepper to taste
Using cracked pepper really renders a different flavor than using pepper powder. If you don’t have a pepper cracker then you can use your pestle and mortar and grind coarsely. And if you’re out of both like I am, I just place the pepper corns on my cutting board and roll the side of my coffee cup over the pepper corns applying pressure. A little messy when some of the corns fly off the board, but it works. I am going to buy that pepper cracker soon though.





The mushrooms have to be cooked first. So in a hot pan pour the olive oil, then throw in the garlic, mushrooms and dried herbs. Season a little with salt and pepper. Let it cook on medium heat for about 10 mins.
In a saucepan, on medium heat, put in the butter and flour and mix well. Whisk in the milk and bring to a boil while still whisking. Take off the heat and whisk in the cheese. Keep whisking till all the cheese has melted and you now have a slightly thick sauce.
You can now add in the mushrooms; taste and see if you need more salt and pepper and add accordingly. Mix in the sour cream.

Pasta
You can choose either penne or fusilli pasta; you'll need about 200 to 250 gms of pasta. Cook according to instructions on the packet.
Serve the pasta on a plate and pour over the sauce. I served this with some roasted zucchini and sugar snap peas.
