I am always looking for easy ways to make dinner, easy but
tasty of course. So I looked into my
fridge and saw that I had prawns and mushrooms.
I had also bought some whole wheat penne pasta and decided to make a
quick pasta meal.
This is another white sauce, but I’ve done away with the
sour cream and cheese for this one.
Prawns and Mushroom Pasta
2 tbsp Olive oil
2 cups Mushrooms chopped
½ cup Prawns
¼ tsp Thyme
¼ tsp Oregano
4 cloves of Garlic (grated / minced)
Cracked pepper to taste
Salt to taste

For the white sauce
1 cup milk
5 tbsp Butter (About 75 gms)
3 tbsp All Purpose Flour
2 tbsp Lemon juice
Salt and Pepper to taste

In a hot pan, pour in the olive oil, throw in the mushrooms.
After about 5 mins thrown in the prawns, herbs, salt and pepper. Cook for an
additional 5 minutes or till the prawns are done. They usually turn a hue of
orange when done, so that should give you a fair indication.
To make the sauce, in a pot, put in the butter and flour and
mix together. Whisk in the milk and on medium heat keep cooking till the sauce
thickens. Take off the heat and add in the prawn and mushroom mixture. Mix
well, check for salt and pepper and add some if needed. Once cooled add the
lemon juice and mix. You can top with some finely choppd fresh basil if you
like; I added some dried basil on top.
Pasta
I used whole wheat penne pasta for this dish, but you can use any pasta that
you like, but preferably penne or fusilli.
You will need about 200 gms of pasta. Cook according to package instructions.
Once drained, serve some pasta onto a dish and top with the white sauce with
prawns and mushrooms.
