So given that I just cooked a fish dish using Dijon Mustard,
I wanted to use it to make a salad as well. This salad was impromptu, easy and
went well with the fish. While the Buttered Mustard Salmon is cooking in the pan
you get started on this dish and you will have this meal with the fish and
salad ready in under 30 mins at the most.
I used small macaroni for the pasta salad, this cooks in
about 5 minutes. But check your box for cooking time.
Mustard Pasta
Salad
100gms of Pasta
1 tsp Dijon Mustard
2 tbsp Vinegar
3 tbsp Extra Virgin Olive oil
2 medium Tomatoes (diced)
¼ cup Mushrooms
¼ tsp Basil (dried)
¼ tsp Oregano
¼ tsp cracked pepper
Salt to taste

Cook the pasta according to package instructions. Cook the
mushrooms, whole, in boiling salted water for about 5 mins. Once cooled a bit,
roughly chop them.
In a salad bowl, mix the Dijon mustard, vinegar, olive oil and give it a good whisk. Toss in the herbs, chopped tomatoes, chopped mushrooms, pasta and mix well. Add salt and pepper to taste.
